The eye fillet (or tenderloin) is savoured as one of the most tender cuts of beef as it is a muscle that does very little work. It is a lean cut that grills beautifully and quickly, however it also works very well with other rich flavours (for instance in beef wellington, filet mignon or stroganoff).
