Dorrigo pasture raised and finished beef
The bladebone steak is one of the most underrated steaks. It is commonly used in recipes suited for slow cooking as it has great beef flavour, and the bone adds more flavour. However it also comprises of the oyster blade muscle which means that if it is cooked correctly, it can make a great steak for grilling. Many beef farmers prefer this steak over a T-bone for it's flavour.
