Our rolled pork roast utilises the pork neck fillet (collar butt or scotch) as it remains juicy when roasting. We tie the crackling around the roast so the meat is protected while it roasts and the rind crackles. We source our free range pigs from Mirrabooka Pork, Lawrence.
